Ingredients:
- Polish sausage -this is optional, cut into pieces
- Mushrooms, roughly chopped
- Onion, diced
- red or yellow pepper, cut into small pieces
- 1 carrot, grated
- 2 Cucumbers in brine, cut into pieces
- Organic tomato sauce
- olive oil
- Spaghetti, wholewheat
Boil water in a pan, add some salt, add spaghetti and cook al dente.
Heat up olive oil in a wok. Add sausage. After 2 mins add onion and mushrooms, fry stirring for about 3 mins, add pepper and carrot. After 2 mins add tomato sauce and cucumbers in brine, cook for another 2-3 mins. Serve with spaghetti and some grated cheese on top.
