Ingredients:
- 2 medium fresh tomatoes, chopped
- 2 cups peeled diced cucumber
- 1/2 medium onion, finelly minced
- 2 medium cloves garlic, pressed
- 2 cups garbanzo beans, drained well
- 3 TBS fresh lemon juice
- 3 TBS chopped basil leaves
- 2 TBS extra virgin olive oil
- salt and cracked pepper to taste
- romaine lettuce leaves to serve
Mix all ingredients except lettuce together and chill. Serve on a bed of lettuce.
